How to make corn noodle
The first step is pounding the corn. About 5 kilograms of corn is pounded with husk. The corn is pounded into small pieces called corn rice, carefully prepared and immersed into the water in 30 minutes, then fermented in a day and night.
After that, the corn rice is sprayed water to keep wet. After 3 days, it is immersed into the water in a day to eliminate the sour favor before being turned into the flour. At this time, the corn flour is compressed into blocks, cut into small pieces and boiled in about 15 minutes. Finally, it is grinded again. It needs kneading more one time with warm water before being cooked in boiling water.
This type of noodle takes 6 to days to complete. The noodle has a bright yellow, very soft and sweet which is cooked into many delicious dish.
